Serving Guide This page will help you preserve the flavor and delicate preparation used to create our meals. Following these guidelines will insure that your meal is the best it can be. Feel free to print this page and retain it for your event!
- Beef
Our beef is U.S.D.A choice top round. Care has gone into the cooking and slicing of your beef order. To keep the beef tender and tasty we deliver the beef separate from its juices (cold). You must warm the gravy up and add the beef as you need it. An electric frying pan or crock pot is perfect for this or you can purchase a sterno rack and fuel from us.
- Chicken
Our chicken recipe has been passed down in our family for three generations. We use a three stage breading technique to retain a perfect coating on our chicken. If you are serving the chicken within 30 minutes of delivery it may remain in the box. If longer than 30 minutes then we suggest you take it out of the box and place it in a warm oven (170o) uncovered until serving.
- Pasta
We are very proud of our most famous item, baked mostaccioli - and our other pasta dishes. If you are serving within 30 minutes of delivery it may remain in the box. If longer than 30 minutes then we suggest you put pasta in a (170o) oven until you are ready to serve. Please leave it covered.
- Sausages, Meatballs, Baked Ham
These items should be handled the same as the pasta dishes.
- Salads & Relishes
Salads are all prepared with the finest ingredients and are made fresh daily in our family kitchen. They should be kept cold and out of direct sunlight. Our tossed salad has vinegar and oil dressing in a separate container. This is so you can toss your salad right before serving so your salad stays crispy, or you may choose to put one of your own dressings out for more variety.
